Because she has been wanting to eat my chocolate cake again..
Instead of the usual chocolate ganache, i tried a new recipe from Alice Medrich. It totally rocks!!
I’ll never eat any other chocolate fudge sauce again!
Cocoa fudge sauce
1/2 cup cocoa powder (I used Valrhona)
1/2 cup sugar
pinch salt (1/4 tsp)
1/2 cup heavy cream
3 tbsp unsalted butter
1 tsp vanilla (optional)
1. Whisk together cocoa, sugar and salt until well blended in medium saucepan.
2. Add enough cream to make a thick paste and incorporate all dry ingredients. Add remaining cream and butter. Stir over low heat until sauce is smooth and hot but not simmering. Remove from heat. Stir in vanilla if using.
(and i added 1 good tsbp of rum *wink*)
*sauce keeps well in covering container in fridge for a week or it can be frozen for up to 3 months.
