I believe durian needs no introduction in this blog anymore.

After Durian Cake and Durian Puffs, i bet you’d know how much i love durians by now aye? I think i had made it quite clear earlier? Damn, i’m really so Dory these days! *clicks on the Durian Cake entry* Aahh okieee, i did!

So yes, durian and tiramisu…

On a scale of 1 to 10, 10 being extremely impatient and 1 being i don’t really care, photographing these precious in cups propelled my already-not-so-patient nature to 9.9 (!!) and i kid you not. Usually, i could carry on shooting for 5 to 10 minutes, playing with the angles and my few props but this tiramisu, let’s just say.. i didn’t even give a damn how the photos turned out because all i wanted to do was to wolf all of it down. STAT!

Man, you have no idea how trying it was, fighting the urge to just to drop the camera and EAT! You know, one of those very rare ‘screw the photos…screw the blog. I just wanna eat the friggin food‘ moments. In this case, it was durian-misu!

Durian Tiramisu

*yields 6 cups + 1 full casserole in the smallest size
* as for lady’s finger, i like this brand starts with V that can be found in all Cold Storage, Singapore. the packaging is orange in colour.

Syrup
90 ml water
90 ml milk
75ml Bailey
15 ml rum
1 teaspoon vanilla
1.5 tablespoons melted chocolate or chocolate syrup

Cream

500g mascarpone cheese
250 g whipping cream
500g durian flesh, pureed with hand blender
50-70g sugar
15 -25ml XO whisky or Otard

Method
Roast the lady fingers in the oven at 160°C for about 5 minutes. (Optional) could be done without. Roasting the ladyfingers will give the cake a better flavor.

First make the cream and place in the refrigerator.
Beat very well the whip cream + the above sugar until sugar is dissolved, make sure you don’t mix it too much (whip cream can turn to curds if over beaten), and then, beat the cheese for just a few seconds. Combine cream, cheese and durian. Add whisky. Mix well.

For the syrup
Place all the ingredients into a measuring cup and warm 30 seconds in the microwave. It doesn’t need to be hot, just warm would do.

Assemble the cake
Place a layer of lady fingers on the bottom of the baking pan, using exactly half the liquid sprinkle all over the lady fingers, make sure you don’t put too much in one side and less in other areas.

Take a tea strainer and powder with cocoa (about 1 full teaspoon-if needed more add as desire) all over the lady fingers.
Take 1/2 of the cream mixture and place it in the middle of the cake. This is a little tricky… cream tends to stick to the spoon and get loose because of the cocoa powder. What I do, is push the cream towards the sides of the pan, until it touches the walls. The cream must touch the walls all around, and make sure the cream is spread well and no holes are communicating with the lady fingers bellow. We don’t want any liquid to go to the layer bellow.

Place next layer of lady fingers over the cream, sprinkle the rest of the syrup, sprinkle with cocoa and place the rest of the cream on top of everything. Level well and sprinkle plenty with cocoa.

Refrigerate over night.

Halfway through fiddling with the camera, i decided i had enough. I took the spoon and well, the rest of the story… it’s for me to know and not for you to find out. Not good for ma image, y’know! (if, i had one to begin with that is) HA!

I went into action (read : snap, click, snap) with 5 full cups (of tiramisu).

And I came back with just 3 + 2 empty ones.

I don’t usually bake cookies or biscuits.

That’s because we have quite a number of cookie monsters at home, myself included. Hee! Under normal circumstances, these cookies would be gone in say, 3 days max. If you look at it from one angle, it’s a good thing. I’m very certain all bakers would be really pleased seeing how fast their bakes fly off shelves, in this case, tubs.

However, if you look at it from another angle, it’s really quite a bad idea to bake cookies or biscuits given how fast these little morsels disappear!

Why, you ask.

Well.. because 3 days later, i’ll get boys complaining about sore throat or cough.

But.

Once a while, i’ll still bake them though. There are too many good recipes to try out!

Chocolate Cookies with White Chocolate Chips

Adapted from AllRecipes – Black & White Chippers
Makes 2 tubs

  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3/4 cup white chocolate chips

Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats.

In the bowl of a stand mixer or a large mixing bowl with a hand-held electric mixer, cream together the butter, brown sugar, and white sugar until light and fluffy. Add the egg and beat to combine.

In a separate bowl, sift the cocoa, flour, baking soda, and baking powder. Gradually beat the flour mixture into the creamed mixture until fully incorporated. Fold in the white chocolate chips by hand with a spatula.

Using a spring-loaded ice cream scoop or a spoon, drop rounds of dough onto the prepared cookie sheets. Bake 8-10 minutes, until puffy but still soft, being careful not to over-bake. Allow to cook on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Verdict :

Taste wise, it wa’s OK. Didn’t wow me that much. Apart from its lovely colour — i love the contrast! — the cookies were quite crumbly. What i dig most was that every bite i took, there will be a white chocolate chip inside! The boys and i would fight one another for those which had the most choc chips on them. :P

But will i bake these again?

Hmm… most likely not. I don’t fancy repeating recipe unless i love it very very much.

So they say age is just a number. Errmmm… judging from ma behaviour, i have no choice to but to agree wholeheartedly. Grin. I really don’t behave like a 30 something for sure. Sometimes, i think my friends who are not married conduct themselves in a much more appropriate manner than me! Heh. What’s worse is most of the times, the gfs would stare at me in disbelief and proclaim that i gotta be the most not-motherly mother in the whole wide world! LOL!

Even Darcy thinks so too — i received a card from him today asking me to grow up otherwise, i’ll get a slap…… on my backside! Hmmpphhhh!

Please tell me it’s not such a bad thing to treat my babies as friends. I mean, i do act like a mother when i need to, you know. Err.. to friends who have seen the clip of me monkeying up the mango tree, yes.. mango tree (!) and successfully plucked 2 juicy green and very sour looking fruits whilst the boys cheered on from the ground, husshhhhhhhhhhh!

This year, i would like to wish for something else. No longer the same ol’ same ol’ .. happiness.

This year, i wish for better memory.

To those whom i’ve not whined to, just so you know.. my memory is getting from bad to worse to worst.

Sigh.

Have you known anyone who had just washed her face 10 minutes earlier and went back in to the bathroom and wash it 10 minutes later? No? Well, now you do. Mind you, it’s not just that. I have difficulties in remembering words as well. If you find me using strange or the wrong word to express certain things, that’s because i couldn’t remember / recall a better word for it and then i would anyhow use a word as a substitute. It’s humiliating to say the least.
(psstt : u have no idea how many times i’ve wanted to dig a hole and bury my head in when i re-read my entries. Hahaa! Yes, i don’t have a habit of going through my entry before i click “Publish”)

I’ve no idea how good your memory is or was, but for me, i gotta say i’m pretty blessed when it comes to this department. I don’t toot my own horn most of the time, or rather not at all (because i’m a perfectionist unfortunately but luckily, i’m a lazy one too. HA!) but this, i have to say, i used to have pretty extraordinary memory. I can remember like not many does. In school, i was a teeny weeny well known for being one of the tops  in History and Geography (i was in Science stream by the way and Biology rocks fyi!). I can remember numbers exceptionally well. I never forget friends’ birthdays and thankfully, i still don’t. In short, i used to be the friends’ walking dictionary especially during examination period. Dates, names, places, events, terms, formulas … bring it on baybeh!

So yeah, imagine my current frustration. :(

For someone who blogs, it’s really quite trying. That explains the lack of better or more appropriate words used in my entries aye? These days (since last week actually), i try to jot down words that i don’t use often in a small book. Occasionally, i will go through them just so i don’t forget. As for my spoken language, good gawwwdd.. i really don’t want to discuss that. All i can say is that i often pause, mull and out of frustration, i’ll just use words that aren’t suitable . Worst situation ever? I spout incoherent sentences! *face palm*

So enough is enough.

I’m really sick of having this leaky memory of mine. So this year, i’ll put aside my happiness and wish for better memory. It doesn’t matter if i don’t have back the memory which i used to have before. 50% improvement would be more than good enough.

Screw childbirth x 3 (!!) but hey, no regrets.
