The Moluccas Room – a new fine dining concept featuring the unique marriage of authentic Indonesian cuisine and French cooking techniques. Helmed by Indonesian-born Chef Alicia Tivey who has got 20 years of experience in the kitchen, this almost centrally located restaurant at Marina Bay Sands is convenient for unforgettable business or leisure, or even romantic meal for those who are out to impress.

Moluccas, the former name of present day Maluku, is an Indonesian province consisting of islands that produce spices such as nutmeg, clove and mace, among others. Having grown up in Indonesia, Chef Alicia has a fondness for Indonesian food. Her passion for Indonesian cuisine and French cooking made her a perfect fit for The Moluccas Room.

The first item that was placed right in front of us almost took my breath away.

4, yes, 4 (!!) chili sambals of varying spiciness and ingredients for us to pick from, to accompany the main courses. For me who loves chili and curry to death, this is awesomeness!

Specially designed for The Moluccas Room….. for every single chair there is in the restaurant, for your precious designer bag, but ermmm.. ahem, for my case, for my GWP* anyhow throw around bag. LOL!

This happens only when chor lor people (read : me) mess around with food too much when photographing. :P

We started the meal with signatures of The Moluccas Room – Sate, the Indonesian grilled meat skewer.

While the friends had grilled meat on their skewers, i had prawns – Sate Udang Java $27 – on mine (upon request). Kindly let Chef Alicia know your dietary preferences and the ever so friendly chef will be more than glad to whip up something innovative but still delicious for you accordingly.

The Sate, grilled to perfection over a charcoal flame, was definitely one of my favourites. I actually ate it just like that, even though it came with a specially paired sauce because it was good enough on its own.

Tangy green mango salad and Aceh styled deep fried shrimp paste marinated chicken chunks garnished with a mix of aromatic fresh herbs and crispy shallot flakes, succulent fried king prawn topped with aromatic Western Sumatra sauteed chili sambal and Indonesia’s most well-known chicken soup that warms the soul and taste buds with aromatic spices and marinated chicken shreds.. seriously, tell me, what is there to dislike? :)

The fluffy tumeric coconut flavoured rice was something i couldn’t resist eating, especially with all the chili/curry dishes. I think i ate most of it despite the fact that i was nestled between 2 male friends! *gasps* The sweet and spicy fish was something i enjoyed quite a bit though silly me actually expected the real stuff, you know, the type you’d get from Jimbaran. Heheeee!

The friends really loved the Angus Steak Rendang. The aromatic and spicy gravy certainly did not overshadow the premium beef but me being me, i still prefer the good old rendang that uses ‘jelly’ beef which simply melts in your mouth after cooking it lovingly for 2-3 hours. :P

And then… it was dessert time. YAY!!!

We had gula melaka ice cream with kerisik which was simply the best i’ve ever had! If permitted, trust me, i’d love to have a litre of this yummy, calorie busting sinful creamy stuff.

Next to the ice cream was Sri Kaya Creme Brulee $17. Creamy coconut custard fragrantly flavoured with pandanus and topped with the perfect caramelised crust, hmmm… need i say some more? (as seen above, the brulee comes with ice cream. in my case, it was the mind blowing gula melaka ice cream)

Besides the food at The Moluccas Room, the blend of authentic and contemporary is further reflected in the warm and inviting interior décor with stylish dark wood furniture, illuminated intricate batik motifs and fine-dining tableware. Full glass windows on one side of the restaurant offer a scenic view of the Marina Bay with the city outline as a backdrop.

The service at The Moluccas Room demonstrates the tatakarma hospitality – an etiquette of service that shows respect, reverence and esteem for guests. As part of the tatakarma culture, guests are offered a complementary welcome mocktail upon being seated followed by a canapé taster or an amuse bouche that reflects a dish from the ala carte or degustation menus. This attentive, personal yet respectful level of service seals the The Moluccas Room dining experience.
