see the top cookie? i made some without the granulated sugar coating which i much prefer ;)

I’m sure you have seen these cookies somewhere.

If it’s not here, then it will definitely be there. These cookies are that famous i tell ya!

Even without all the raves on the food blogosphere, hearing the name of the cookies alone can get me excited already. Grin. Green tea! Matcha! Importantly, matcha and sablé! Umm… nuff’ said ;)

Green Tea Sable Cookies

(makes about 50, from Okashi by Keiko Ishida)

240g plain flour (chilled)
15g green tea powder (matcha powder)
150g unsalted butter, at room temperature
130g icing sugar –> i reduced to 100g but in the near future, will reduce even more to 90g
pinch of salt
2 egg yolks
granulated sugar
1 egg white
green tea leaves (optional)

Sift flour and green tea powder twice. Set aside.

Beat butter, icing sugar and salt until soft and creamy. Add egg yolks and mix well. Add flour and green tea powder mixture and fold in with a spatula. Cover dough with plastic wrap and chill in the refrigerator for about 15 minutes.

Divide dough in half. Place both portions in two large pieces of parchment paper. Shape into logs about 3.5cm in diameter. Wrap logs with parchment paper and refrigerate until firm. If not using immediately, wrap with cling film and freeze. Cookie dough can be kept for up to 2 months in the freezer.

Preheat oven to 150′C. Cut logs into 7mm thick rounds. Dip edges in granulated sugar. Place cookies on a baking sheet lined with parchment paper. Bake for about 25 minutes, then remove and leave to cool on wire rack before serving. Store cookies in an airtight container at room temperature for up to 10 days.

ps : do not place the unbaked cookies on the pre-heated cookie sheet like what my helper did when i coincidentally happened to be in the toilet then, unless you wanna get uneven + melted granulated sugar coating and chao-tar (burnt) bottoms like mine :P

Note : i dislike the sugar that coats around the cookies. pretty yes but too sweet! for all my future bakes, i’d omit the sugar unless i’m photographing :P

Verdict?

Hmmm… if you are on some diet programme or trying to lose weight, do not .. i repeat, DO NOT attempt this. Don’t say i didn’t warn you! These little green monsters morsels are completely addictive!!!! So so good. I grabbed the whole jar and refused to let go. The boys were madly in love with it too! Like me, they grabbed another jar and ate all by themselves. Haha!

Needless to say, the cookies were gone within 2 days.

When the friend brought along his packets of cookies to be given out, we were wow-ed by the very masculine packaging.

When the friend gave us a packet each to try, we were very wow-ed by the cookies!

Of course i had to ask for the recipe!

The normal choc chip cookie recipe which i have using from the Famous Amos website is everything but Famous Amos -_-

The friend apologised profusely and refused… After all, it’s his bread and butter recipe! In the end, after much pleading — we’re baaaaaaaad like that! — he gave in. 2 obasan, 1 dainty man.. how to refuse??? ^.^

After securing the precious recipe, i churned out 2 batches for the friends.

The first time.. was kinda bleh.. heheeee.. wicked me tricked the gfs by telling them that it was chewy choc chip cookies and gave them a packet each!

*DONT KILL ME PLEASE, DARLINGS!!*

The thing is, i really did bake them specially for them! It’s just that i was very unfortunate that the cookies didn’t turn out the way it was supposed to during my first bake. I’ve never thought i’d do a boo-boo with cookies…

Oops. Hahahaa.. *over confident eh?* :P

The second time was much better.

In fact, it tasted exactly like the friend’s after a session of troubleshooting the problem with the dainty male friend. YAY!

Again, i gave a jar of it away.. to a lovely new friend, who simply can’t get enough of it or so she claimed. Heeee. The rest? I We devoured it all by myse ourselves in a day!

These little morsels are absolutely wiccccckeddd!

Will be baking them no more!

Eh, they are bad for my waistline k???!?!?!??!

I love these round tarts!

Definitely my choice of tart if i can only make 1 type. For peeps who love the pineapple jam alot and alot and care not for the melt in your mouth tart.. (provided that the baker wraps the jam with as little dough as possible lah) ;)

Ironically, i like the tart more than the jam but i still prefer this kind of pattern rather than the flower one. Somehow, it tastes much yummier!

This flower type was something i made last year.

Less time consuming needless to say but not as good as the round type in my opinion :)

And then, i made some more cookies. This time, it was something i came up with myself. Don’t think u’d seen this anywhere yet!

Sounds weird aye?

But let me assure you, it’s not.

However, i only managed to experiment 1 trial round and that was it, as shown here in the photo. Due to my tight schedule, i couldn’t do trial round no.2 though i’ve jotted down what to add more and what to cut down.. unfortunately.

Nevertheless, trial round no.1 was good enough for me to give-away as CNY gifts which i did. All of it in fact coz they filled up 2 small tubs nicely :)
